Approximately how long does it take for the sponge to rise? Is there a test for that? Should it also take approx. 1-1 1/2hrs?
It really depends on the temperature of the dough and/or room temperature. I made a sponge a few days ago and it took about one hour to double in volume and get bubbly.

It's not necessary. As the dough rises, it clings to the bowl and that's a good thing.

When kneading my dough the first time using your recipe it does not come out as smooth as yours. It kinda tears and does not knead well. I am using king Arthur bread flour. I live in Colorado could the altitude be a factor? It is also hot I'm my house because I have no air conditioning in the kitchen. Also my dough tears and does not stretch when making the pizza. Any suggestions? Maybe more oil?Thanks again!
The heat can definitely effect your dough. Try using cool water. If the dough is rising too fast, put it in the fridge for awhile to slow it down. Altitude can have an effect also, but I don't have personal experience with that to offer advice.Make sure the dough is very relaxed before you try to stretch it out. Do not knead or shape it right before stretching. Good luck.
